FISH BUTCHERY

A fish retail store and a modern fishmonger. ‘Butchery’ because it conjures connotations of dry handled fish, produce that is cut to order and the experience of chatting to a skilled butcher about what to cook for dinner.

The first in Australia, Fish Butchery works directly with fisherman as well as the Sydney Fish Markets to bring a plethora of underutilised fish to our kitchens. The use of these species not only make it more sustainable, but more interesting as well.

Fish Butchery displays fish in static refrigeration rather than mounds of ice. Fish are  dry handled, dry scaled, gutted, filleted, pin boned and, when appropriate, dry aged. Fish are also available to be cut to order.

Fish Butchery allows Josh Niland and his team to interact with customers in a new way and allows them to enjoy high quality seafood at home. They also provide a selection of takeaway dishes including fish & chips, bbq packs and their custom made fish weights (used to cook crisp-skinned fish).
